Vanilla pound cake

Prep time - 15 min 
Cook time -1 hr 
Serves- 12-15 

Ingredients:
1.Eggs - 5 (large)
2.Unsalted butter - 1 cup
3.All purpose flour - 1 1/2 cup
4.Sugar- 1 cup plus 2 tbsp.
5.Vanilla extract- 2 tsp
6.Salt - 1/4 tsp.

Procedure:
1. Beat the butter until its softened. Next add the sugar and beat this mixture for about 8 to 9 min. This allows the loaf to become light and fluffy without actually adding the baking powder and soda.



2.Now make a well in the centre of the butter/sugar mixture and crack the eggs so that they are placed in the well.

3.Beat the mixture just until the eggs are incorporated.


4.Add the vanilla extract.

5.Add the flour and beat the mixture for another 2 min till light and fluffy.



6.Pour the batter in a greased and dusted pan of 4"x8" and bake for 1 hr in a preheated oven at 160 c.

Simple vanilla cake topped with ganache and chocolate chips:)



Prep time - 20 min
Cook time- 35 min 
Serves- 10 -12

Ingrediets:

For the cake 
1.Unsalted butter-1/2 cup
2.Sugar- 1 1/4 cup
3.Eggs- 4 (medium sized)
4.Salt-1/2 tsp
5.Flour -2 1/4 cups
6.Yogurt- 1 cup
7.Baking powder- 2 1/4 tsp
8.Baking soda - 3/4 tsp
9.Vanilla extract - 2 tsp

For the topping 
1.Dark chocolate ganache frosting - 1 1/2 cup
2. Chocolate chips- 1/2 cup
3.Caramel filled chocolate bites - 10 (approx)

Procedure 
1. Beat the sugar and butter until light and fluffy , until 5 min .
2.Add the eggs one by one until just incorporated.
3.Add the vanilla extract and salt
4.In a separate bowl, sift the flour , baking powder , soda, and add this mixture alternating it with the yogurt to the egg mixture.
5.Beat the mixture for an extra 1 min.
6.Pour the batter into a 9x13 in pan.
7.Bake in a preheated oven at 160 c for 35 min or until a tooth pick when inserted into the cake , comes out clean.

7.Cool the cake completely before spreading the ganache on top , and decorate it with chocolate chips and caramel filled chocolate bites. Enjoy the cake :)



8.Keep the cake refrigerated for 4 days or at room temperature upto 2 days .

The best vanilla cupcakes ever !

Prep time - 20 min
Cook time - 13 min
Serves- 50 mini cupcakes and 20 medium sized cupcakes 

Ingredients
1.Vegetable oil - 1/2 cup +1/8 cup
2.Sugar- 3/4 cup+ 2 tbsp
3.Eggs- 2
4.Vanilla essence- 1 1/2 tsp
5.All purpose flour- 1 cup + 1/8 cup
6.Corn flour- 1/4 cup
7.Baking powder- 1 1/2 tsp
8.Salt- 1 tsp
9.Yogurt/sour cream- 3/4 cup(i prefer yogurt)
10. Hot water- 1 tbsp.

Procedure
1.Beat the sugar and oil in a bowl till the sugar gets partially dissolved, for 2  min.

 2.Add the eggs , one by one ,then the vanilla, beat for another 2 min. Add the hot water( make sure that the sugar almost gets dissolved at the end of this stage)
3.In a medium sized bowl sift the flour , corn flour , salt and baking powder together and add this to the above mixture. Make sure that the ingredients and just combined (do not over-beat the mixture)
4.At last add the yogurt/sour cream and beat the mixture for half a minute making sure that all the ingredients are perfectly combined.
5.Place the liners in a cupcake tray and fill the moulds with 3/4 batter.
6.Bake in a preheated oven at 170 c for 13 min(for mini cupcakes) and 22 min (for medium sized cupcakes).

7.Let the cupcakes cool before you top them up with buttercream :)

Oreo cupcakes :D

Prep time - 20 min
Cook time - 22 min 
Serves- 24 cupcakes

Ingredients 
For the cake 
1.Oreo halves- 24 (the cream side up)
2.All purpose flour-2 1/2 cups
3.Baking powder - 1tsp 
4.Unsalted butter- 3/4 cups
5.Confectioners sugar- 1 2/3 cups
6.Salt- 1 tsp 
7.Egg whites - 3 
8.Egg yolk- 1 
9.Vanilla essence- 1 tbsp 
10.Milk- 1 cup 
11.Apple cider vinegar- 1 tsp (add the vinegar to the milk) 
12.Oreo cookies(coarsely chopped)- 15

For the buttercream frosting
1.Icing sugar- 500 g
2.Unsalted butter - 150 g
3.Finely ground oreos - 10 
4.Vanilla essence- 2 tsp 
5.Milk- 4 tbsp

Procedure
1.In a medium sized bowl beat the egg whites till you get soft peaks.Keep aside.
2.In an other bowl cream the butter and sugar till fluffy , about 2 min.
3.Add the egg yolk,then the vanilla.


4.Alternating the flour and milk , add it to the above mixture.
5.Add the salt and baking powder.
6.Now fold in the egg whites into the above mixture and then the chopped oreos.

7.Line the muffin tray with liners and place the oreo halves , cream side up into the the liners.

8. Place the batter into the liners , filling 3/4 of them.


9.In a preheated oven at 170 c bake for 24 min .
10.Cool the cupcakes before you top them up with the oreo buttercream :)

To prepare the buttercream froting
1.Cream the butter till soft 
2.Add the icing sugar , alternating it with milk.
3.Add the vanilla, and then finally add the ground oreos and mix for about 2 min approx.

Chocolate banana swirled muffins :)

Prep time - 40 min 
Serves - 12

Ingredients:
1.Eggs -1
2.White sugar- 1/4 cup
3.Brown sugar- 1/2 cup
4.All purpose flour - 1 1/2 cups 
5.Vegetable oil- 1/3 cup
6.Bananas - 3 (mashed)
7.Cocoa powder- 1/4 cup
8.Milk(hot)- 45 ml
9.Baking soda- 1 tsp 
10.Baking powder- 1 tsp 
11.Salt -1/2 tsp
12.Vanilla essence - 1/2tsp 

Procedure:
1.In a bowl mix together the bananas and the sugars till well incorporated .
2.Next , add in the egg, oil ,30 ml of milk and vanilla essence and blend the mixture till you get a smooth texture.
3.Add in the flour, baking soda , powder, and salt. 
4.Take 1/3 of the batter and add the cocoa powder to this mixture .Add the rest of the milk to this mixture and mix properly.
5.In a lightly greased muffin pan , pour the banana batter evenly topping each mould with the chocolate mixture . Swirl so that the chocolate and banana batter mix lightly.
6.In a pre-heated oven at 170 c , bake for exactly 22 min .
7.When a toothpick inserted into the cake
comes out clean , your muffins are ready ! Enjoy :)

Fudgy oatmeal chocolate bars !

Prep time - 5 min
Cooking time - 20 min
Serves - 8 

Ingredients
1.Unsalted butter- 1/2 cup (melted)
2.Brown sugar - 1 cup
3.Eggs - 1
4.Oats - 1 1/2 cup
5.All purpose flour - 1 cup
6.Vanilla essence - 1 tbsp
7.Dark chocolate chips - 1 cup
8.Sweetened condensed milk - half of 1 tin
9.Salt - a pinch

Procedure
1. Mix the eggs , sugar , melted butter and vanilla together with the help of an electric whisk or a hand whisk.

2. Add the oats and flour alternatively until just combined ( you can do this with the help of a spatula to prevent over mixing of the mixture).

3.Spread 3/4 of the above mixture into a pan , smoothing it with a spatula to form a crust.

4.In a microwave safe bowl , heat the chocolate and the condensed milk for 45 sec on high and mix till both the ingredients and well incorporated.

5. Now pour the above mixture onto the oat mixture in the pan smoothing it evenly.

6.Spread the remaining oat mixture onto the chocolate mixture (it need not cover the whole chocolate layer) and bake in a preheated oven at 350 c for 25 min.

7.Set pan aside and allow the bars to cool for an hour before serving.
